This is it, people! The moment we’ve all been waiting for… Cinco de Mayo is happening on taco Tuesday!

I made this super fun Cinco de Mayo snack board with produce I got from a local community co-op. They had a Cinco de Mayo theme and Mexican recipes in mind when shopping produce at the state farmers market.
$25 of Cinco de Mayo themed farmers market produce from our local community co-op. Jalapeños, tomatillos, tomatoes, corn on the cob, cilantro, onions, garlic, avocado and limes to make some yummy Mexican dishes!!
I had too much stuff to put on one board but not enough stuff to put on two boards. And I actually forgot two things I wanted to add to my taco board. I’m going to share everything I included (with recipes) as well as what I wanted to include!
Nacho Appetizer Board

Surprisingly, tacos are one of the things my kids love to eat and rarely complain about. They LOVE meat & cheese!!
Tacos are one of our family’s favorite foods and you can have them for lunch or dinner. I loved experimenting with new Mexican recipes too! I usually keep it really simple during meal time with tacos, quesadillas or enchiladas. But this was so fun!
Also I’m really glad I got to use a lot of the food from my community co-op produce basket. A lot of times I end up wasting my fresh produce because we don’t eat it fast enough or I can’t think of a good way to use it. Glad this food had a purpose and got eaten!
